This dish is so simple to make, absolutely anyone can do it! It is simply chicken fillets, topped with mozzerella and then wrapped in parma ham. Alternatively, use turkey breast fillets - they are half the price and half the fat.
What you need...
4 chicken breast fillets
150g mozzerella ball
8 slices of parma ham
Put the chicken breast fillets on a greased baking tray. Slice the mozzerella ball and place onto each of the chicken breasts. Wrap the fillets in parma ham and place into a preheated oven, at 200C, for 20 minutes.

Wild Mushroom Risotto
Sunday, 15 August 2010A risotto is a really easy dish to make. You don't need to overcomplicate it with a wealth of herbs - keep it simple with just a handfull of ingredients.
What you need...(for 4 people)
1 Onion
1 litre of vegetable stock (Recommended - Knorr stock pots)
250g Arborio rice
2 varieties of mushrooms (normal, chestnut, oyster)
Marscapone cheese
Finely Chop the onion and gently fry in a little olive oil and a little butter. Add a little sea salt and fry for 5 minutes. Then add the rice and stir off the heat - so that the rice absorbs some of the juices from the onion. Now add half of the stock, stir and place onto a low heat. Let the risotto simmer until almost of the stock has been absorbed, before adding a half of the remaining stock (1/4 of the original stock)
In another pan, fry your chosen mushroom medley for about 5 minutes. Drain off some of the excess juices before adding to the risotto. If the risotto is ready, simply add a tablespoon or two of the marscapone into the risotto and stir well. If the risotto is not ready, add the remainding stock and simmer again - when it is ready, add a tablespoon or two of the marscapone into the risotto and stir well.
Serve and add some grated parmesan if you like.

Very Simple Bruschetta
Wednesday, 24 February 2010Bruschetta is basically toasted bread with a savoury topping, ideal to have as a starter. This version of bruschetta is not only healthy, but costs very little and is very simple to make.
What you need...(for 4 people)
4 panini (you could use Ciabatta, focaccia or ASDA do a nice tomato and herb infused bread)
500g Cherry Tomatoes (on the vine)
Onion
Sauce (Passata or simply a jar of Ragu)
Sliced Cheese
Firstly, dice an onion and gently sweat in a saucepan with a touch of olive oil. Chop the cherry tomatoes into half and then half again. Add to the pan and stir before adding the sauce. Simmer for 10 minutes, stirring often. While you wait, slice the panini horizontally and toast both sides. Spoon the mixture onto the panini and cover with sliced cheese. Simply grill for a few minutes

Chicken, Ham & Leek bake - (for 4 people)
A really simple and healthy meal, where we throw everything in a casserole dish, put cheese on top and then sit down, relax for half an hour and then eat. The recipe is for 4 people, so adjust the ingredients if you are cooking for a different number of people.
What you need...
4 chicken breasts (1 per person)
500g leeks (chopped)
ham (chopped into strips)
grated cheese
cheese sauce
Firstly, par-boil the leeks. Then throw everything into the casserole dish. Cover with the cheese sauce - click on sauces if you're unsure on how to make your own. Add the grated cheese on top and place the dish in the oven at 200˚C for 30 minutes. Alternatively, use turkey breasts instead of chicken. They are virtually half the price and for those on a diet, turkey contains half the fat of chicken.
