Very Simple Bruschetta

Bruschetta is basically toasted bread with a savoury topping, ideal to have as a starter. This version of bruschetta is not only healthy, but costs very little and is very simple to make.

What you need...(for 4 people)
4 panini (you could use Ciabatta, focaccia or ASDA do a nice tomato and herb infused bread)
500g Cherry Tomatoes (on the vine)
Onion
Sauce (Passata or simply a jar of Ragu)
Sliced Cheese

Firstly, dice an onion and gently sweat in a saucepan with a touch of olive oil. Chop the cherry tomatoes into half and then half again. Add to the pan and stir before adding the sauce. Simmer for 10 minutes, stirring often. While you wait, slice the panini horizontally and toast both sides. Spoon the mixture onto the panini and cover with sliced cheese. Simply grill for a few minutes
